Bob's Redmill Old Fashioned Biscuits

Possibly the best biscuits ever!


  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 1 cup milk


Preheat oven to 425 degrees F. Whisk together the flour, baking powder, sugar and salt. Cut in butter with pastry blender until the mixture resembles coarse crumbs. Slowly add milk and stir until dough just comes together. Dough will be wet and sticky.


Turn dough out onto a lightly floured surface and knead 15 times. Gently roll or pat dough to 1 inch thick. Cut biscuits with a biscuit cutter. Place biscuits on ungreased baking sheet.


Bake 12-15 minutes or until golden brown.


Makes 6 big biscuits.

No Yeast Dinner Rolls (Mayo Rolls)


  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons mayonnaise


Preheat oven to 350 degrees F. Combine all ingredients. Spoon mixture into greased muffin tin cups. Bake for 15 minutes or until golden brown.

Baked Oatmeal Cups


  • 2 eggs
  • 1 cup brown sugar
  • 3/4 cup unsweetened applesauce
  • 1 1/2 cups whole milk
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 3 cups old fashioned (rolled) oats
  • 2 teaspoons baking soda
Mix all ingredients; allow mixuture to rest for 30 minutes. Preheat oven to 350 degrees F. Spray muffin tin with non-stick spray. Place 1/4 cup of mixture in each well. Bake for 30 minutes.

1/2 batch ingredients:

  • 1 egg
  • 1/2 cup brown sugar
  • 3 fluid ounces (3/8 cup) unsweetened apple sauce
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1 1/2 cups old fashioned (rolled) oats
  • 1 teaspoon baking soda

Southern Milk Gravy


  • 1 1/2 tablespoons all purpose flour
  • 1 1/2 tablespoons vegetable oil (or butter, bacon grease)
  • 1 cup milk
  • 1/2 teaspoon salt
  • generous pinch of black pepper
In a skillet, combine flour and oil. Over medium heat, stir for about 2 minutes until mixture is a very light tan color. Add milk and stir flour mixture to combine. Add salt and pepper. Stir constantly until mixture comes to a boil. Boil for 2 minutes or until gravy is as thick as you prefer. Makes 1 cup.

Cook's notes: Once your gravy is cooking, there is not a good way to make it thicker but if you need it thinner add a little more milk. 

You can add cooked, drained sausage to this to make a sausage gravy.

Turkey Sausage




  • 1 pound (16 ounces) Jennie-O ground turkey (in a roll)
  • 2 teaspoons rubbed sage
  • 1/2 teaspoon salt
  • Crushed red pepper to tolerance (I used 1/4 teaspoon)
  1. Mix all ingredients in a bowl.
  2. Divide turkey sausage mixture into 8 portions. Patty out or roll into links, however you prefer.
  3. In a non-stick skillet, cook until no longer pink in center.
  4. Can be frozen if needed.
Nutrition information (per 2 oz. serving): 80 calories, 5.5 g fat, 195 mg sodium, 0 g fiber, 10 g protein

Tater Tot Sausage Breakfast Casserole







  • 2 pounds breakfast sausage
  • 1 (30-32 ounces) package frozen tater tots
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 8 eggs
  • 2 cups milk
  1. Preheat oven to 350 degrees. 
  2. In a large skillet brown sausage until no longer pink and drain. 
  3. In a large bowl, toss tater tots, cooked sausage and cheeses. Pour into a lightly greased 13 x 9 inch dish.
  4. Whisk together eggs, salt, black pepper, garlic powder, onion powder and milk. Pour over tater tot mixture. *Cover and refrigerate at this point if baking later.*
  5. Bake uncovered for 50-60 minutes, or until eggs are set.

Melissa's Pico De Gallo



  • 6 Roma (Plum) tomatoes, diced
  • 1 medium yellow onion, diced
  • 1 lime, juice of
  • 1 tablespoon minced garlic (I used jarred)
  • 2 jalapeno peppers, diced (remove stems, seeds and membranes if you don't want heat)
  • 1 bunch of cilantro, chopped
  • salt

Mix all ingredients in a bowl;add cilantro and salt to taste. Place in refrigerator and allow to set for several hours. Serve with your favorite foods or chips.

Banana Nut Bread


  • 3 very ripe  bananas
  • 1 cup sugar
  • 1/2 cup (1 stick) margarine, softened
  • 2 cups all-purpose flour
  • 2 eggs
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts
  1. Peel bananas and mash in a large bowl. Combine with sugar and margarine; whip well.
  2. Add other ingredients, except nuts, and beat well. Mix in nuts.
  3. Pour into 2 well-greased 8 1/2 x 4 1/2 inch loaf pans. Bake 40-60 minutes at 350 degrees.
  4. Remove from pans and cool on rack. This bread freezes well.
Cook's note: For a taller bread, one recipe will probably fit in a loaf pan. Adjust cook time accordingly.

This is a recipe that I have had for a long time and do not know where I got it.

Melon With Sweet Lime Dressing


  • 3 cups cubed honeydew melon (about 1/2 melon)
  • 3 cups cubed cantaloupe (about 1/2 melon)
  • 2 tablespoons orange marmalade
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon chopped fresh mint leaves
  1. In a large bowl, combine marmalade, lime juice, honey and mint; mix well.
  2. Using melon ball tool, scoop both melons into bowl.
  3. Toss dressing gently with melon to coat. Serve immediately.

Cook's notes:  The next time I make this I will probably only use 1 type of melon so that I can use a whole melon or will double dressing and use all of both melons.

Applesauce Cake



  • 1 package white cake mix (needs to be moist or pudding in the mix type)
  • 3/4 cup applesauce
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • Whipped topping or cream
  1. Combine all ingredients, except whipped topping, in a mixing bowl and beat on medium speed with an electric hand mixer until smooth.
  2. Pour into a greased 11 x 7 cake pan.
  3. Bake at 350 degrees for 25 to 30 minutes or until a knife inserted in the middle comes out clean.
  4. Serve with a dollop of whipped topping or whipped cream on top.

Mamaw Mobley's Chocolate Gravy


  • 1 cup sugar
  • 2 tablespoons cocoa
  • 3/4 cup evaporated milk
  • 2 tablespoons margarine, to add at the end
  1. Stir together sugar and cocoa in a 2 quart saucepan. Stir in milk.
  2. Heat over medium heat, stirring constantly, until mixture come to a boil.
  3. Mixture will "puff up" in the pan, but should not boil over. It will eventually boil back down, about 2 minutes or so. When it has done this, boil for about 30 seconds longer, until you are happy with the consistency.
  4. Stir in margarine and serve over fried eggs and biscuits.

Basic Quinoa


I learned to cook quinoa from Mrs. Alana in this video. She is cooking a healthy dinner so please try the other dishes she makes on this video. The quinoa tutorial begins about 3:15. Here's the written recipe:

  • 1 cup quinoa, uncooked
  • 1 1/2 cups water or broth
  1. Rinse the quinoa well! Place water and rinsed quinoa in a saucepan with a tight-fitting lid. Add a small amount of salt (quinoa absorbs salt easily).
  2. Place a piece of aluminum foil on top of pot and put lid over this. 
  3. Bring quinoa to a boil, then reduce heat to a simmer. Simmer for 15 minutes.
  4. Let stand, covered, for an additional 10 minutes. Fluff with fork.

Family Favorite Waffles

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 3/4 cups milk
  • 1/2 cup cooking oil
  • 1 teaspoon vanilla
  1. In a medium bowl, stir together the flour, sugar, baking powder and salt. Make a well in the center of the flour mixture.
  2. In another bowl, beat the eggs, slightly; stir in the milk, oil and the vanilla.
  3. Add the egg mixture all at once to the flour mixture. Stir until just moistened (the batter should still be slightly lumpy).
  4. Pour 1 to 1 1/4 cups batter onto the grids of a preheated, lightly greased waffle iron . Close the lid quickly and do not open until done.
  5. When done lift the waffles of the iron with a fork.
  6. Repeat the procedure with the remaining batter.

Cook's notes: I use a GE rotating waffle iron so I only have to use about 1/2 cup of waffle batter. I also use cooking spray to grease my waffle iron. This stays good in the refrigerator for several days so you can satisfy your inner waffle obsession for several days. I also double this recipe, which is below:

  • 3 1/2 cups all-purpose flour
  • 4 tablespoons sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 1/2 cups milk
  • 1 cup cooking oil
  • 2 teaspoons vanilla
Follow directions as written above, using a 4 quart mixing bowl.

Breakfast Bowls & Burritos

I cannot get enough of these...


  • A roll of your favorite breakfast sausage, sausage links or patties, bacon or ham; browned, drained (if needed), cut into bite sized pieces
  • A bag of frozen, diced hash brown potatoes (I use the potatoes "O'Brien", with the peppers and onions)
  • Oil or butter
  • Sliced cheese or shredded mild Cheddar cheese
  • Scrambled eggs
  • Soft Taco sized flour tortillas
  • Diced Tomatoes or Salsa
  1. Slowly brown the hash browns in a skillet with the oil or butter. If they get too brown before the potatoes are soft, just put them in the microwave for a couple of minutes to soften!
  2. Everything else is cooked, so if you want a Breakfast Bowl, place the ingredients you like best in your bowl and enjoy!
  3. For Breakfast Burritos, warm a tortilla in the microwave then layer the ingredients you like best, making sure you can roll it up when you are done!
Cook's notes: Others say to wrap the burritos in foil and freeze them. When ready to thaw them, just warm them in the oven for a few minutes.
